Two-Minute Banana Oat Bread & an Easy Chia Seed Jam 

The microwave can be a great tool for reducing time in the kitchen and producing quality recipes. For stovetop or oven directions, click on the original recipe links mentioned below or make my banana oat flax loaf that follows.

2-Minute Banana Oat BreadI modified the 2-minute english muffin recipe from The Big Man’s World to make these. 


1/3 cup oats + 1 TBS flax (both ground in my clean coffee grinder)

1 TBS soy milk 

2 TBS mashed very ripe banana

Form into a dough ball then place into a microwave-safe bowl. Dough should be sticky, not dry. No need to cover. Microwave 2 minutes then cool on a plate at least 5 minutes. Slice and serve:-). 

Easy Chia Seed JamThis easy 5-minute chia seed jam recipe can be found on the Pick up Limes blog. It will thicken as it sits. I used frozen mixed berries + frozen blueberries, the juice from a freshly squeezed orange, maple syrup and chia seeds. 

No-Frills Oven-Method Banana Oat Flax Loaf(gluten-free, oil-free, nut-free)

1 3/4 C oat flour + 1/4 C ground flax (I use my coffee grinder to grind both in batches)
1/4 C soy milk

3 mashed banana (1 large, 2 medium)

Mash bananas in a mixing bowl then stir in oat flour, flax & soy milk. Dump into a parchment-lined loaf tin & bake at 350F for 45 min. Cool, slice & serve. Stores in fridge about 3-5 days.
