Vegan Fast Food by The Colorful Vegan

Vegan fast food made healthy… 

Lentil Sloppy Joe’s: These taste amazing tucked between two slices of toasted whole grain bread. Serves 4.

What you’ll need:

1 cup green or brown lentils, picked through and rinsed in several changes of water 

2.5 cups vegetable broth or water (or 1/2 & 1/2)

1 medium sweet or yellow onion, diced small

1 green or red bell pepper, diced small

(Optional) 1/4 piece minced jalapeno

2-4 cloves minced garlic

1.5 TBS chili powder

2 tsp oregano

Salt to taste (up to 1 tsp)

1 8-oz can tomato sauce

4 TBS tomato paste 

1 TBS maple syrup

1 TBS dijon mustard 

First cook the lentils. Bring the 2.5 cups water or broth to boil in a soup pot with the lentils. Turn down to simmer (covered) for 35-40 minutes, until soft (age of lentils will determine cooking time).

While lentils cook, take a deep skillet and saute onion + bell pepper in oil (or 2-3 TBS water) for 7 minutes. Add garlic and saute 1-2 more minutes. Add the chili powder, paprika, oregano and salt and stir about 10-15 seconds then add tomato sauce and paste. Drain the lentils when ready and stir them into the mixture along with maple syrup and mustard. Serve with baked fries and enjoy a bon bon for dessert (recipes follow:-)!  (Adapted from Post Punk Kitchen’s Snobby Joes recipe).Baked Fries & Homemade Ketchup: Fries and a quick homemade unsweetened ketchup (tomato paste + apple cider vinegar to taste). Russets are peeled, sliced, & soaked in ice water for 30 minutes then pat dry & slathered in oil, garlic powder & smoked paprika. Bake on a foil-lined baking sheet at 450 for 35 min.Bon Bons:-)1 small tub of non-dairy ice cream or 4 peeled, chopped frozen bananas processed in a food processor with a few TBS non-dairy milk until creamy……then hardened in freezer 

+ 1 bar of vegan dark chocolate & 3 TBS non-dairy cream like coconut or soy for the coating.

Melt the chocolate with the cream, then work quickly to scoop ice cream, roll into a ball & dip in chocolate. Place bon bons on a parchment-lined dish and then in freezer for at least 30 minutes.
