Best Ever Healthy Summer Treats 

Ready in 10 Chocolate Avocado Pudding: 1/2 large peeled & pitted avocado (or 1 medium), 2 heaping TBS cacao powder or unsweetened cocoa powder, 2 TBS agave, 6 TBS soymilk or coconut milk (unsweetened). Combine ingredients and blend using an immersion blender or process in a food processor until smooth. Serve in small bowls with optional toppings such as almonds, pistachios, strawberries or raspberries. Cool in fridge about 1 hour before serving. Serves 2.Kelly’s Raw Vegan Cereal: Quick & simple: Combine 1 ripe banana chopped, a handful of fresh blueberries, 2 TBS raw almonds, 1 TBS hemp seeds, and 1/4 cup plain unsweetened soy milk.5-Minute Chocolate Walnut Brownies: 1 heaping cup raw walnuts (1 1/4), 1 TBS hemp seeds, 2 heaping TBS Oats, 2-3 TBS cacao powder (or unsweetened cocoa powder), & 8 pitted Medjool dates. Process in a food processor until a brownie texture forms. Transfer mixture onto a parchment-lined plate or baking pan. Place in fridge for at least an hour before cutting into squares. Stores in freezer about a month. Great for a mid-day snack or for fuel during exercise. If you like banana ice cream (peeled, chopped & frozen bananas run thru a food processor with 2 TBS of non-dairy milk until a soft serve texture forms), this brownie is great crumbled over the top–a great movie-watching treat!! Enjoy:-) Cashew Date Cream with Fruit: Soak (separately) 1 cup raw cashews & 2-3 pitted Medjool dates between 2-4 hrs (or overnight). Drain & rinse the cashews but save the date water. In a blender or food processor add the cashews, dates + 3-4 TBS of date water. Start with less water & add more to get the cream blending. Less water = thicker cream. Delicious over fruit, mixed into smoothies, or added to frozen banana ice cream.Frozen Banana Nice Cream:-) : In a food processor, add 2 peeled and chopped frozen bananas, 2 TBS cacao powder (or unsweetened cocoa powder), 3 TBS non-dairy milk (I use lite canned coconut milk), 1 TBS agave (optional), 1 heaping TBS almond butter. Process until smooth, stopping to scrape down sides. Takes about 5 minutes or so until a soft serve forms. Stir in chopped nuts (almonds, pistachios or cashews) and cacao nibs or pieces of dark chocolate. Makes 2 large servings. Enjoy!
